You'll have the opportunity to butcher a half hog from Roller Coaster Farms into primal and various sub-primal cuts. You'll also learn the basics of sub-primal cuts, sausage-making and the processes of making salami and dry-curing. The class is held in our Underground Meats processing facility, so you'll get to check that out as well. 

The classes are limited to just 8 participants and includes food and drink from Underground Catering. Participants go home with 8+ pounds of personally wrapped cuts which often include a variety of pork chops, tenderloin, ribs, bacon and more.

Once signed up, participants receive an email approximately one week prior to the class date with class details which include directions to the facility.

** Please note, class purchases are refundable or transferable up until 10 days prior to the class date - purchase made within the 10 day time frame are considered final sales and cannot be changed or refunded.
