Whole Hog Breakdown


Butcher a half hog from one of our local sources (see our Farmers page) into primal and various sub-primal cuts, in our Underground Meats processing facility.

The class: ~3 hours, limited to 8 participants, and includes food and drink from Underground Catering.

Go home with a variety of cuts: pork chops, ground pork, belly, picnic shoulder etc. Just ask your butcher/teacher if you would like specific take home cuts.

** Please note, class purchases are refundable or transferable up until 10 days prior to the class date - purchase made within the 10 day time frame are considered final sales and cannot be changed or refunded.
