Kickstarter / HACCP Update

Underground Meats is happy to announce that we have finished the initial draft of our HACCP. We have spent the last 6 months researching, consulting industry experts, and working with food safety professionals at the Center for Meat Process Validation at the University of Wisconsin - resulting in a plan that has been approved through our processor validator. This is in no way the end of the this process. We plan to update this draft once the results of our challenge study have been finished.  We will continue to work with others towards better food safety and access to information. Our greatest hope is that others will take this plan and update it to fit their own needs, while contributing additional information towards a more complete and adaptable plan.

Unusual Hours - February 2, 2014

On Sunday, February 2, 2014:

• Forequarter will be closed. 

• Underground Butcher will close early at 5pm.

We will be having our annual staff party and will also be rooting for the Seattle Seahawks. We welcome you to come visit us another time!
